Recipe for Pumpkin Spice Oatmeal with Sautéed Apples

Ingredients
For the oats
¼ cup pure pumpkin puree
⅓ cup rolled oats
⅔ cup dairy-free milk or water
2 tablespoons pure maple syrup, or to taste
½ teaspoon pumpkin pie spice (cinnamon, clover, nutmeg, ginger powder)
For the sautéed apples
½ teaspoon coconut oil
1 teaspoon pure maple syrup
½ of an apple, diced
¼ teaspoon pumpkin pie spice (cinnamon, clover, nutmeg, ginger powder)
2 tablespoons chopped pecans
Optional for topping:
Nut butter (pecan/peanut/almond/hazel)

Instructions
1. In a small saucepan, combine all ingredients for the oats base. Simmer for a few minutes, stirring occasionally
2. Close with lid, turn off the heat and let it sit for few minutes
3. Meanwhile, heat a small sauté pan and melt the coconut oil. Add the diced apple, maple syrup, and cinnamon. Sauté about 5 minutes. Add the chopped pecans.
4. Serve in a bowl and if desired, drizzle with a nut butter.
