Chocoholic's Beetroot-Chocolate Fudge Recipe

If I told you that you could satisfy your Chocoholic sweet tooth with beets would you believe me?

Enter the Beetroot Chocolate Fudge – a delightful spongy and fluffy fudge, perfect for any occasion. Trust me, you will make this recipe once and you will never want to make any other chocolate cake ever again! More over this recipe is made without flour and dairy which makes imperfect for people with gluten free or dairy free diets.

First let's talk about the health benefits packed into every decadent bite of this Beetroot chocolate fudge. Beetroot, with its earthy sweetness, is a nutritional powerhouse. Rich in antioxidants, vitamins, and minerals, it supports cardiovascular health, aids digestion, and boosts stamina. Pair it with good quality dark chocolate, containing at least 70% cocoa, and you've got yourself a potent dose of antioxidants that can improve brain function, lower blood pressure, and even enhance mood. It's a match made in heaven – the sweetness of the beetroot complementing the bitterness of the chocolate, creating a harmonious blend of flavors and nutrients.


You can make the cake as is or add extra twists to it, for example like I did this time with Amarena cherries, and it was amazing!



The Ingredients and Their Holistic Health Benefits:

  1. Pre-cooked Beetroot: Packed with antioxidants, vitamins A and C, folate, and fiber, beetroot supports liver function, boosts immunity, and promotes detoxification. According to Traditional Chinese Medicine (TCM), beetroot can help nourish the blood and improve circulation.

  2. Quality Dark Chocolate (at least 70% cocoa): Rich in flavonoids and antioxidants, dark chocolate offers cardiovascular benefits, improves cognitive function, and may lower the risk of stroke. In TCM, cocoa is considered warming and can help invigorate the spleen and uplift the spirit.

  3. Ground Almonds: High in protein, healthy fats, and fiber, almonds support heart health, aid in weight management, and help stabilize blood sugar levels. According to TCM, almonds are neutral in nature and can benefit the lungs and large intestine.

  4. Eggs: A good source of protein, vitamins, and minerals, eggs provide essential nutrients for muscle repair, brain function, and hormone regulation. In TCM, eggs are considered nourishing to the body's essence and can help strengthen the spleen



Raw beetroots


Ingredients:

For cake pan with diametr 20cm you will need:


250g - Cooked beetroots

200g - Quality dark (vegan) chocolate - at least 70% of cocoa

120g - Almond flour

4 - Freedom organic eggs

130g - Brown sugar (I used coconut sugar) - This recipe is not too sweet, which I prefer, but If you like your cakes little bit sweeter you can add around 150-160g of sugar

1 - baking powder

1Tbsp - Raw cocoa powder


optional:

2Tbsp - Amarena syrup

2Tbsp - Amarena cherries, cut in half


If you don't add Amarena that is very sweet, I recommend using either 150g sugar or 2Tbsp of a maple sirup or honey instead of the Amarena syrup.



Instructions for Beetroot-Chocolate Fudge Recipe:


  1. Boil the beets and let it cool down enough so you can peel the skin.

  2. Preheat the oven to 180 degrees Celsius.

  3. In a larger bowl, I mix all the dry ingredients.

  4. Grate the beetroots, directly into the other ingredients, add egg yolks, and leave the egg whites separately.

  5. Melt the dark 70% chocolate in a water bath, or create it using cocoa and cocoa butter. Pour the melted chocolate into the mixture with the beetroot.

  6. Add two tablespoons Amarena syrup and cherries If using and mix everything thoroughly.

  7. The batter should be slightly sticky, not liquid.

  8. Beat the egg whites into stiff peaks and slowly fold them into the batter.

  9. Pour the batter into the cake pan and bake at 180 degrees Celsius for about 45 minutes.

  10. After removing from the oven, I let the cake cool slightly before serving with extra Amarena cherries or scope of dairy free ice cream.
