Ingredients for Mediterranean Shakshuka Recipe

4 eggs
2 small red bell pepper (or 1 big), julienne
½ onion, finely chopped
2 garlic cloves, chopped
½ cup tomato sauce
½ tsp ground coriander
½ tsp ground cumin
Salt and pepper
1/4 cup chopped fresh parsley leaves
Optional:
You need to eat Shakshuka with a good bread!I recommend Israeli Chalah, pita or fresh sourdough bread with crunchy edges.
Instructions
Heat olive oil in a large skillet. Add the onions, bell peppers, garlic, spices and salt. Cook, stirring occasionally, until the vegetables have softened, about 5 minutes.
Add the tomato sauce, if you have a tomato paste add a bit of water. Cover and let simmer for about 15 minutes.
Uncover and allow the mixture to reduce and thicken. Taste and adjust the seasoning to your liking.
Using a wooden spoon, make 4 “wells” in the tomato mixture. Gently crack an egg into each indention, add salt on the eggs. You can also mix the egg with form to break the egg yolk.
Reduce the heat, cover with lid, and cook on low heat until the eggs are cooked to your liking.
Sprinkle with fresh parsley.
Serve with warm challah or pita bread, or crusty sourdough bread of your choice.
