I tried this recipe for Chickpea Chocolate Chip Cookies and it turned out surprisingly yummy. Gluten free and protein rich snack. The recipe is very simple so give it a try!
Ingredients for Chickpea Chocolate-chip Cookies
10 cookies
1 can chickpeas (280g of chickpeas)
â…” cup peanut butter
¼ cup maple sirup
1tsp baking powder
¼ tsp baking soda
â…“ cup Chocolate chips
Salt
Optionally:
Add peanuts for crunch
½ cup of almond flour for extra love
Instructions:
Preheat oven to 180C
Blend washed chickpeas with peanut butter and maple until smooth (without the can water) then add baking powder and baking soda and if you are using also add almond flour and mix well
Add chocolate chips and peanuts and mix gently into the batter
Form cookies, place them on a baking tray with baking paper.
Bake for about 8-12 minutes for 180C
Let them cool and enjoy!Â
