When hunger strikes and you want something quick but nourishing, this "Orange soup” recipe is your answer. It's an easy one-pot meal that transforms simple ingredients into a vibrant, warming dish.
I just always wondered, If this soup has a normal name - we've always just called it "orange soup" because, well, look at that color!
Orange vegetables like sweet potatoes, pumpkin, and carrots are rich with beta carotene - > boost immune function, support eye health, and provide powerful antioxidants that help protect your cells from damage.
Orange Soup Recipe
Ingredients
2 medium sweet potatoes
1 large chunk of pumpkin (same amount as the sweet potatoes)
3 medium carrots
1 medium onion, peeled and finely chopped
3 Cloves of Garlic, teaspoons minced garlic
½ cup orange lentils, washed
2-3 tbsp Olive oil
1 tsp Yellow Curry powder
Salt
Organic vegetable broth powder (optional)
Water
Garnish (optional):
Fresh parsley leaves, finely chopped
Pumpkin or/and Sunflower seeds, roasted
Croutons
Instructions
Open all the spices in preheated pot and oil, keep stirring for 1 minute
Add chopped onion, stir for 2 minutes
Add garlic + all the vegetables and stir until partially “browned” (for best flavor)
Add water/or broth + washed orange lentils
Cook for 20-30 minutes, until lentils are soft
Serve as is or cool the soup down a bit and blend it to pure
Top with chopped parsley leaves and roasted sunflower seeds and croutons
