This vegan Garlic soup will boost your immunity system!
Ingredients for Vegan Winter Garlic Soup
5-6 Servings
1 cup garlic cloves, half sliced, half minced
4 big onions
6 potatoes
Dried marjoram
Dried oregano
2 cups Vegetable broth
1 Tbsp Miso paste
Olive oil
Salt and pepper
Optional:
Vegan cheese
Bread croutons
Fresh parsley leaves
Instructions
Chop and roast onion until brown, add half of the amount of the garlic and roast for 1 minute until the garlic is fragrant but not brown
Add potatoes, vegetable broth, salt and pepper and the dried spices and boil for about 10 minutes.
Add the minced garlic and simmer for another 10 minutes.
Turn off the heat, add miso paste and let the soup rest for a few minutes before serving.
Serve with croutons and vegan grated cheese
