Don't buy expensive unhealthy snacks and make these no-bake vegan granola bars with just 5 ingredients. Perfect snack for a busy day at work or school or on a road.
Ingredients for 5 Ingredients Granola Bar
1 cup - full medjool dates, pitted
1/4 cup creamy natural peanut butter or almond butter
1 cup almonds, loosely choppedÂ
1 1/2 cups rolled oatsÂ
1 tsp cinnamon
Optional Addition Ideas:
chocolate chips
dried fruit
nuts
chia seeds
hemp seeds
rice puffs
vegan protein powder
Instructions
Process dates in a food processor (about 1 minute). It should form a "dough" like consistency.
In a large bowl add oats, almonds and dates and set aside
Warm maple syrup and peanut butter in a small saucepan over low heat. Stir and pour over oat mixture and then mix it in.
Once thoroughly mixed, transfer to a baking dish or other small pan lined with baking paper.Â
Press down firmly until flattened – I use something flat, like a drinking glass, to press down and really pack the bars, which helps them hold together better.
Cover with another baking paper and let firm up in a fridge or freezer for 15-20 minutes.
Remove bars from pan and chop into even bars.
Store in an airtight container for up to a few days. I kept mine in the freezer to keep them extra fresh + they will last for up to 1 month.
